My suggestion is to test this on your particular setup.
For example, at one organization I setup servers with dual Xeons at 2.8GHz
and 2.5 GB of RAM.
1 GB is used as ramdisk for amavisd-new (to speedup scanning) so that leaves
1.5 GB for the OS and processes (you don't want swapping under any
conditions).
Also, separate SCSI disks are used for the OS (logs) and for postfix spool
directory.
This setup runs perfectly with 30 active amavisd-new processes.
YMMV.
