Ok I just found out...

/etc/mail/spamassassin is a symlink to /etc/spamassassin/

but for some reason, the $CHROOT/etc/mail/spamassassin was not linked to
../spamassasin but was an empty directory :(

I can't beleive I spent hours and hours on that one...
